Maple Bacon Oatmeal Cookies
I had an intro written for this post, but then I received this email from our neighbor, who was lucky enough to get to try one of these cookies. His email says it best...
"Oh My Cookie!

Just the right texture with a non-overpowering bacon start and maple-slide finish. Some other variations I’ve had feature too much Ms. Piggy; yours is just a whiff of her leaving the room with the briefest salute to our Northern Neighbors Delight."

You will need:
One oatmeal cookie mix
1/2 stick unsalted butter, melted
About 5 pieces of bacon (cooked and chopped into small pieces)
1/4 Cup bacon grease (from the bacon you just cooked above)
1 tsp maple syrup
1 large egg
1. Preheat oven to 350°F. Prepare a baking sheet and set aside. In a medium bowl, combine melted butter, bacon grease, and sugar mixture. Whisk until combined. Add the egg and maple syrup and whisk until combined.
2. Fold the flour mixture in and mix until just combined. Fold the bacon pieces in (should be about 1/2 Cup). Scoop heaping tablespoons of dough onto the baking sheet, spaced 2" apart. Bake for 8-10 minutes, until the edges begin to turn golden brown. Let cool on the baking sheet for 3 minutes before transferring to a cooling rack. Enjoy!
